Food Safety Overview - Thursday, June 09, 2011

According to the CDC there are about 48 million illnesses associated with food poisoning and about 3,000 deaths. Fortunately these diseases can usually be avoided by taking some necessary precautions when preparing, cooking, serving and storing your food.

It takes a lot of bacteria in our food to make us sick. By keeping food below 40 degrees or above 141 degrees we can stop they bacteria from multiplying. The temperatures in between are known as the Food Danger Zone. Food should be left in this temperature danger zone no longer than an hour. When serving food, especially buffet style, it's important to monitor the temperature of food to make sure it doesn't fall below 140 degrees. The last Monday of every May we here in the U. S. observes Memorial Day in honor of all the fallen soldier in the U.S. military. It also, less importantly, marks the unofficial beginning of the summer. Many Americans celebrate this day with a cook out!

 

Yummy Potato Salad

6 hard boiled eggs, chopped 1 ½ teaspoons salt

10 red potatoes ¼ teaspoon black pepper

1 cup mayo 1/8 teaspoon paprika

½ cup ranch 1/8 teaspoon celery seed

1/3 cup dill pickle relish

2 tablespoons yellow mustard

Place potatoes in pot and just cover with water. Bring the pot to a boil over high heat. Reduce heat to medium-low, cover then simmer till tender, aprox. 12-20 mins. Drain, then refrigerate until cool. Remove, peel and cube. Mix together the mayo, ranch, relish, mustard, salt and pepper, paprika and celery seed in a large bowl. Add the eggs and potatoes and mix to cover. Refridgerate at least 2 hours before eating.

(2) 24 oz bottles of Corona

8 oz. Silver tequila

1 container of frozen limeade

In a large pitcher combine beer, tequila and limeade. Stir. Serve over ice in a salt-rimmed margarita glass. Enjoy!!
